Wondering what to do with all of those mandarin oranges from your Korean co-workers? The Jeju Weekly presents to you another mandarin themed dish, a mildly sweet salad featuring Jeju Island’s natural candy. This beautiful yet simple mandarin chicken salad makes a delicious light entrée for three to four people or can be presented as a side dish.

Preparing the mandarins (10 minutes)

Ingredients
3 Jeju Island mandarin oranges (small to medium size).
Step 1: Peel the mandarin oranges.
Step 2: Break the oranges into their natural segments.
Step 3: Peel the pith from the individual mandarin segments.

Preparing the chicken (5-10 minutes)

Ingredients
2 boneless skinless chicken breasts
½ teaspoon salt
Oil (fried option)
Step 4: Slice the two chicken breasts in half horizontally, resulting in four thinly sliced pieces of chicken. Lightly salt the chicken.
Step 5: Grill or lightly fry the chicken on a low to medium heat until the pink inside has turned white.
Step 6: Slice chicken into bite-size strips.

Preparing the salad dressing (5 minutes)

Ingredients
¼ cup vegetable oil
¼ cup sugar
¼ cup Jeju Island orange juice
1 package ramen noodles
1 teaspoon white vinegar
½ teaspoon salt

Step 7: Mix the vegetable oil, sugar, and orange juice in a microwave-safe bowl. Heat the mixture for about 30 seconds or until the sugar dissolves. Stir mixture.
Step 8: Add salt and vinegar to the mixture. Stir.
Step 9: Crush the ramen noodles in the package and add it to the mixture. Stir.

Note: There will likely be more than enough salad dressing.

Preparing the salad (2-5 minutes)

Ingredients
½ head romaine lettuce or about half a bag of mixed greens (the clear plastic bags found in the produce section).
Step 10: Chop the lettuce.
Step 11: Toss the mandarin wedges, the sliced chicken, the salad dressing, and the salad in a large bowl. Enjoy!

This recipe was inspired by a Chinese noodle salad recipe that can be found here: Allrecipes.com/recipe/chinese-noodle-salad. Jeju Island orange juice was added to give the salad dressing a sweet, Jeju Island twist. I found the amount of vinegar in the online recipe to be overpowering, so I significantly reduced the vinegar in my recipe to permit the other ingredients to stand out more. While I was unable to find sliced walnuts in Seogwipo, I suspect this would be a delicious addition if they are available. A vegetarian version of this dish might substitute the chicken for crushed walnuts or pine nuts.
